Assistant Cook, Cook and Bartender Skills

All three curricula run from 05.10.2026 to 31.01.2027. Learning combines theory, guided practical contact learning, workplace practice, independent study and final assessment.

Practical skills for assistant cooks

Foundation knowledge and skills for work in a professional kitchen: work organisation and safety, goods handling, cleaning, ingredient preparation, basic cooking, customer service and integrated practice.

  • Volume: 10 ECTS, or 260 astronomical hours
  • Contact learning: 120 hours
  • Workplace practice: 96 hours
  • Independent study: 36 hours
  • Final assessment: 8 hours

Cook

Skills for independent kitchen work: preparing and serving a broad range of food and drinks, menus and technology cards, costing, stock control, customer service, professional digital skills and substantial workplace practice.

  • Volume: 15 ECTS, or 390 astronomical hours
  • Contact learning: 138 hours
  • Workplace practice: 180 hours
  • Independent study: 62 hours
  • Final assessment: 10 hours

Bartender

Practical preparation in bar operations, goods and stock, drink preparation and service, customer service, sales, payments, and professional digital and language skills.

  • Independent study: 44 hours
  • Final assessment: 6 hours

The curricula support competences in the relevant Estonian occupational standards, but do not automatically confer a professional qualification or an EQF level. A micro-credential certificate may be issued only after the relevant curriculum has received the required activity licence.
